Classic Creamy Coleslaw

    Combine the shredded green cabbage, carrots, and red cabbage if using in a large mixing bowl.

    In a separate bowl, whisk together the mayonnaise, cider vinegar, Dijon, sugar, celery seed, salt, and pepper until smooth and the sugar has dissolved.

    Pour the dressing over the vegetables and toss thoroughly with tongs until every strand is lightly coated.

    Cover and refrigerate for at least 1 hour, ideally 2 to 3, so the cabbage softens slightly and the flavors meld. Stir before serving and taste, adjusting salt or vinegar as needed.

    Serve cold. The slaw keeps, covered, for up to 3 days, though it will release liquid over time, so drain and stir before each serving.
