Optional but recommended: Snip the ends off each edamame pod with kitchen shears to allow the salty water to penetrate the beans.

Place the raw edamame in a bowl, sprinkle with 1 tbsp of coarse salt, and rub the pods vigorously together with your hands. This removes the fine fuzz and brightens the green color. Leave the salt on the pods.

Bring 4 cups of water to a rolling boil in a large pot. Add the remaining 1 tbsp of salt.

Drop the salt-rubbed edamame into the boiling water. Boil uncovered for exactly 3 to 5 minutes, depending on your preferred level of crunch.

Immediately drain the edamame into a colander. Do NOT rinse with cold water, as it will make them soggy.

Spread the pods out on a tray or fan them to cool quickly to room temperature. Toss with an extra pinch of coarse sea salt right before serving.
