Instructions
- 1
In a medium bowl, whisk the egg yolks and granulated sugar together vigorously until the mixture is pale yellow, thick, and ribbon-like.
- 2
Gently fold the room-temperature mascarpone cheese into the egg yolk mixture until completely smooth and free of lumps.
- 3
In a separate chilled bowl, whip the cold heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture in two batches to keep it light and airy.
- 4
Pour the cooled espresso (and coffee liqueur, if using) into a shallow dish. Quickly dip each ladyfinger into the espresso for just 1-2 seconds per side (do not soak, or they will become mushy).
- 5
Arrange a single tightly packed layer of dipped ladyfingers in the bottom of an 8x8 inch square dish. Spread half of the mascarpone cream evenly over the ladyfingers. Repeat with a second layer of dipped ladyfingers and the remaining cream.
- 6
Cover the dish tightly with plastic wrap and refrigerate for at least 6 hours, preferably overnight, to allow the tiramisu to set. Dust generously with cocoa powder just before serving.
