Instructions

  1. 1

Preheat the oven to 375°F (190°C). Unroll one of the chilled pie crusts and press it gently into the bottom and up the sides of a 9-inch pie dish.

  2. 2

In a large mixing bowl, toss the thinly sliced apples with the lemon juice to prevent browning. Add the sugar, cinnamon, nutmeg, and flour, tossing until the apples are evenly coated with the spiced mixture.

  3. 3

Arrange the coated apple slices tightly into the prepared pie crust, mounding them slightly higher in the center. Dot the cold, diced butter evenly over the top of the filling.

  4. 4

Cover the filling with the second pie crust. Trim the overhanging dough to about 1/2 inch, then fold the top crust under the bottom crust edge and crimp the edges together to seal the pie.

  5. 5

Cut 4-5 small slits in the center of the top crust with a sharp knife to allow steam to escape during baking.

  6. 6

Bake for 50-60 minutes until the crust is a rich golden brown and the apple filling is bubbling through the slits. Let the pie cool on a wire rack for at least 2 hours before slicing to allow the juices to thicken.
