Instructions

  1. 1

Gently divide the ground beef into four equal 4-ounce portions. Form them into patties about 3/4-inch thick, making a slight thumb indentation in the center of each to prevent bulging during cooking.

  2. 2

Preheat a cast-iron skillet or grill to medium-high heat (about 400°F). Generously season both sides of the patties with kosher salt and black pepper just before placing them on the heat.

  3. 3

Place the patties in the hot skillet or grill. Cook undisturbed for 3-4 minutes until a deep, caramelized brown crust forms on the bottom.

  4. 4

Flip the burgers and immediately place a slice of cheddar cheese on each. Cook for an additional 3-4 minutes for medium doneness (140°F internal), allowing the cheese to melt completely.

  5. 5

Lightly toast the brioche buns cut-side down until golden brown. Assemble the burgers: bottom bun, lettuce, tomato, cheese-topped patty, and top bun. Serve hot.
