Slice the steak or chicken against the grain into thin, 1/2-inch strips. In a bowl, toss the meat with 1 tbsp olive oil, the fajita seasoning, and half of the lime juice. Let marinate for 15 minutes.

Heat a large cast-iron skillet over high heat until it begins to smoke slightly. Add 1 tbsp of olive oil.

Add the sliced bell peppers and onions to the scorching pan. Sauté quickly for 3-4 minutes until they are blistered and slightly charred on the edges but still retain a crisp bite. Remove vegetables to a plate.

Add the remaining 1 tbsp of oil to the hot skillet. Add the marinated meat in a single layer. Sear without moving it for 2 minutes to develop a crust.

Toss the meat and cook for another 2-3 minutes until just cooked through. Return the vegetables to the pan, toss everything together, and squeeze the remaining lime juice over the top to deglaze the pan.

Serve immediately directly from the sizzling skillet, accompanied by warm flour tortillas, sour cream, guacamole, and salsa.
