Where it comes from

San Marzano tomatoes are grown in the volcanic soil near Mount Vesuvius in Italy's Campania region, where the variety earned a protected designation of origin for authentic bottles. The name is now also used more loosely on some cans grown outside that region, so the label alone doesn't guarantee the true variety.

Buying it

Look for cans that specify D.O.P. certification if you want tomatoes actually grown in the protected Italian region, since the San Marzano name isn't always regulated on every label. Check that the can isn't dented, rusted, or bulging.

Storing it

Store unopened cans in the pantry, where they keep for about a year; refrigerate any leftover tomatoes in a sealed container once opened and use them within a few days.
