Full Fat Milk

Rich, creamy, and mildly sweet with a fuller body than lower-fat milk.

Lens analyzed

Full-fat milk is whole cow's milk with its natural fat content left in, typically around 3.25 percent, rather than skimmed down. That fat gives it a fuller mouthfeel and richer taste than reduced-fat versions, and it steams and froths differently in coffee drinks. Recipes often call for it specifically when a custard, sauce, or batter needs that extra richness.

Where it comes from

Whole milk was simply "milk" before dairies began separating and selling skim and reduced-fat versions in the mid-1900s as consumer interest in fat content grew. The whole, full-fat version stays closest to milk straight from the cow, aside from pasteurization and homogenization.

Buying it

Check the fat percentage printed on the carton to confirm it's whole milk rather than 2 percent, and pick the furthest sell-by date available at the store.

Storing it

Milk needs to stay cold from the store to your fridge, so refrigerate it right away and reseal the carton tightly after each pour. Give it a sniff before using if it's close to the date, since milk can turn before the printed day arrives.

Keeps about 7 days in the fridge.
