Avocado Egg Boats

A nutritious and filling breakfast featuring a baked egg nestled perfectly inside a ripe avocado half.

Instructions

    Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or use a snug baking dish to keep avocados from tipping.

    Scoop out about 1-2 tablespoons of flesh from the center of each avocado half to create a larger well for the egg.

    Carefully crack one egg into a small bowl, then gently slide it into the well of an avocado half. Repeat for the remaining halves.

    Season the top of each egg evenly with salt and black pepper.

    Bake for 15 to 20 minutes, or until the egg whites are fully set but the yolks are still slightly runny (or cook longer for firm yolks).

    Remove from oven and immediately top with crumbled bacon and fresh chives before serving warm.
