    Heat the olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat.

    Season the beef cubes generously with salt and pepper. Add them to the pot in a single layer and sear until deeply browned on all sides, about 5-7 minutes.

    Stir in the tomato paste and cook for 1 minute until it darkens in color and coats the meat.

    Pour in the beef bone broth, using a wooden spoon to scrape up the flavorful browned bits from the bottom of the pot. Add the dried thyme and bay leaf.
