Keto Pizza with Cauliflower Crust

    Rice the cauliflower in a food processor, then microwave it in a bowl for 4-5 minutes to soften. Let it cool slightly, then transfer to a clean kitchen towel and squeeze out as much moisture as humanly possible (this is crucial for a crispy crust!).

    In a bowl, mix the squeezed, dry cauliflower with 1 cup of mozzarella, the Parmesan, the egg, and a pinch of salt and oregano until a dough forms.

    Bake the crust plain for 12-15 minutes until it is golden brown and firm to the touch.
