Preheat the oven to 425°F (220°C).

Cut the zucchini into 1/4-inch slices. Wrap the zucchini and garlic cloves together in foil and place on a baking sheet. Roast in the middle of the oven until very tender, about 15 minutes. Unwrap and let cool.

Meanwhile, blanch the basil and parsley in boiling water for 10 seconds, then drain and immediately drop into a bowl of ice water to set the color. Drain well.

Add the roasted zucchini and garlic, blanched herbs, water, and lemon juice to a blender and blend until smooth. Season to taste with salt and pepper.
