Peach Cobbler

    Prep the Dish: Preheat the oven to 375°F (190°C). Pour the melted butter directly into the bottom of a 9x13-inch baking dish. Do not stir it.

    Prepare the Peach Filling: In a medium saucepan, combine the sliced peaches, 1/2 cup granulated sugar, brown sugar, cinnamon, and nutmeg. Cook over medium heat for 5-8 minutes until the sugar dissolves and the peaches soften slightly to create a syrupy base. Remove from heat and stir in the vanilla extract.

    Mix the Batter: In a separate mixing bowl, whisk together the flour, 1 cup of sugar, and baking powder. Gradually whisk in the whole milk until a smooth, thin batter forms.

    Layer the Cobbler: Pour the batter directly over the melted butter in the baking dish. Do not stir. Next, gently spoon the warm peach mixture and all its syrup directly over the top of the batter. Do not stir. The magic happens in the oven as the batter rises to the top.

    Bake: Transfer the dish to the oven and bake for 40 to 45 minutes. Watch for the crust to rise up through the peaches and turn a beautiful, deep golden brown.

    Cool and Serve: Remove from the oven and let the cobbler cool for at least 15 minutes before serving. This allows the syrup to thicken. Serve warm with a scoop of vanilla bean ice cream.
