Where it comes from
Steeping coffee grounds in cold water for extended periods has roots in Japanese kyoto-style brewing and other slow-drip methods developed to soften coffee's harsher notes. Bottled and canned cold brew became a mainstream café and grocery product in North America over the past couple of decades.
Buying it
Check whether a bottle is a ready-to-drink beverage or a concentrate meant to be diluted, since the two are used very differently. Look at the brew date if available, since cold brew's flavor fades faster than a shelf-stable product.
Storing it
Keep cold brew refrigerated once opened, where it stays good for about two weeks; unopened bottles should also be kept cold if the label calls for refrigeration.
