Freshly grated wasabi is the rhizome of a Japanese plant, grated on a sharkskin grater (oroshigane) into a pale green paste and served alongside sushi and sashimi in place of the horseradish-based paste most restaurants use. Where it comes from

Wasabi grows along Japanese mountain streams and has always been difficult to farm at scale, which is why authentic fresh wasabi stays expensive and rare even in Japan.
