Zaru Soba

Instructions

    Boil a large pot of water. Add the dried soba noodles in a fan shape, stirring gently so they don't stick.

    Cook according to package instructions (usually 4-5 minutes) until tender but with a firm core; maintain a rolling boil, adding a splash of cold water if it threatens to overflow.

    Immediately transfer the cooked noodles to a strainer and rinse them vigorously under cold running water, rubbing them together to remove excess surface starch.

    Submerge the rinsed noodles in a bowl of ice water for 2 minutes to tighten their texture, then drain thoroughly.

    Serve the chilled noodles in small nests on a zaru (slotted bamboo tray), topped generously with shredded nori.

    Pour the mentsuyu into small cups; serve alongside plates of sliced scallions and wasabi, instructing diners to mix the condiments into their sauce before dipping the noodles.
