Lacinato Kale

Earthy and slightly sweet, milder and less bitter than curly kale.

Lacinato kale is a dark, blue-green kale variety with long, narrow, deeply crinkled leaves, sometimes called dinosaur or Tuscan kale. Its leaves are more tender than curly kale, holding their shape in soups and braises while softening faster when massaged raw for salads.

Where it comes from

This kale variety developed in the Tuscany region of Italy, where it's long been part of dishes like ribollita, a bread and vegetable soup. It reached North American markets more recently as chefs and home cooks sought out its milder texture compared to curly kale.

Buying it

Look for leaves that are deep blue-green and firm, without yellowing edges or slimy patches at the base of the stem. Smaller, narrower leaves tend to be more tender than very large ones.

Storing it

Refrigerate in a produce bag with a paper towel to absorb moisture; it keeps its texture for about a week before the leaves start to wilt.

Keeps about 7 days in the fridge.
