Roast chicken cooked whole on a rotisserie spit is a fixture of Filipino food stalls and grocery hot counters, distinct from the citrus-and-annatto seasoned inasal style grilled over open flame in the Visayas region. Both styles crossed over to North America with Filipino communities, where they're now sold at Filipino grocery hot counters and specialty shops.

Buy it hot and freshly pulled if possible, and check that the skin still looks crisp rather than soggy from sitting under a heat lamp too long.
Storing it
