Paneer

Mild, clean, and milky with very little tang; firm and slightly squeaky when fresh, becoming springy and golden when seared; absorbs surrounding flavors readily.

Lens analyzed

Paneer is a fresh, unaged Indian cheese made by curdling hot milk with an acid — lemon juice or vinegar — then pressing the curds into a firm block. Unlike most cheeses, paneer does not melt when heated; it holds its shape while developing a golden crust when pan-fried or grilled. This makes it one of the most versatile proteins in South Asian vegetarian cooking.

Vegetarian

Where it comes from

Pressed from a single pot of hot milk and a squeeze of lemon, paneer is the quiet backbone of South Asian vegetarian cooking — holding its shape through every sauce and every century.

Varieties — Standard paneer is firm and pressed; softer, creamier versions (chenna before pressing) are used in Bengali sweets like rasgulla and sandesh. Store-bought paneer varies in firmness; fresh or homemade paneer tends to be softer and creamier than the dense commercial block.

Paneer is the primary protein in many North Indian Hindu vegetarian meals, where beef and pork are avoided. It occupies a place in Indian cooking roughly analogous to tofu in East Asian cuisines — a neutral, high-protein block that takes on the flavors around it.

In a modern kitchen — Pan-frying cubed paneer in a little oil until golden brown on two sides before adding to a sauce prevents it from crumbling and gives it a pleasant chew.

Buying it

Look for paneer in the refrigerated section of Indian and South Asian grocery stores, often vacuum-packed in 200g or 400g blocks. It should be white, firm, and smell clean and milky. Fresh paneer from Indian sweets shops is a treat if available.

Storing it

Keep refrigerated in water or a sealed container and use within about a week; unlike aged cheeses, fresh paneer spoils quickly. A sour smell or slimy surface means it should be discarded.

Keeps about 14 days in the fridge.

Out of paneer? Good swaps

  • firm tofu (pressed) — Plant-based; similar neutral flavor and firm texture; fry until golden the same way
  • halloumi — Mediterranean grilling cheese; saltier and slightly rubbery; also non-melting and excellent grilled or pan-fried
  • queso blanco / queso fresco (firm) — Mild and non-melting; works in cooked dishes though it crumbles more easily than paneer
