Where it comes from
Carbonating water artificially took hold in the late 1700s once chemists worked out how to infuse water with carbon dioxide under pressure, mimicking naturally sparkling springs. Bottled and canned seltzer turned into a grocery-store fixture as home carbonation and canning technology made it cheap to produce at scale.
Buying it
Check the can or bottle for added sugar or sodium if you want a plain, calorie-free option, since some flavored seltzers add more than others.
Storing it
Store unopened cans or bottles in the pantry; refrigerate before serving if you want it cold, and once opened, drink it soon since it loses its fizz within a day or two.
