Where it comes from
Star anise is native to southern China and Vietnam and became a foundation spice in Chinese five-spice blends and Vietnamese pho broth, later spreading into Indian and Middle Eastern cooking as trade routes carried it further. Its distinctive shape made it easy to identify and lift out of a simmering pot before serving.
Buying it
Choose pods that are whole and reddish-brown rather than broken or faded pale tan, since intact pods hold their aroma much longer. A few loose seeds in the bag are normal, but a bag mostly full of fragments has likely lost potency.
Storing it
Store whole pods in a sealed container in the pantry away from light; they hold their aroma for close to a year, while broken or ground pieces fade much faster.
