Classic French Toast

Thick slices of bread soaked in a vanilla-cinnamon custard and griddled until golden and custardy inside with crisp, caramelized edges.

Instructions

    In a wide, shallow dish, whisk the eggs until completely smooth and uniform, then whisk in the milk, sugar, vanilla, cinnamon, and salt until the sugar dissolves.

    Heat a large nonstick skillet or griddle over medium heat and add 1 tablespoon of the butter, swirling to coat as it foams.

    Working with 2 slices at a time, dip each slice into the custard for about 20 seconds per side so it absorbs liquid but does not fall apart, letting excess drip off.

    Lay the soaked slices in the pan and cook undisturbed for 2 to 3 minutes, until the underside is deep golden brown and the edges look set.

    Flip and cook the second side another 2 to 3 minutes until golden and the center no longer feels wet or jiggly when pressed.

    Wipe the pan and add fresh butter between batches to keep the surface from scorching, transferring finished slices to a 200°F oven to stay warm.

    Dust with powdered sugar and serve hot with plenty of maple syrup.
