Eton Mess

Mixture of strawberries, meringue, and cream.

    Prepare the strawberry sauce: Take half of the strawberries and place them in a small food processor with a splash of water, or mash them thoroughly with a fork. Push through a sieve if you want a smooth coulis.

    Slice the remaining berries: Quarter or slice the rest of the fresh strawberries and set aside.

    Whip the cream: In a large, chilled bowl, whip the double cream with the icing sugar and vanilla extract until it holds soft, billowing peaks. Do not over-whip.

    Crush the meringues: Roughly crush the meringue nests in your hands into bite-sized chunks. You want a mix of larger pieces for crunch and powdery bits to sweeten the cream.

    Fold the mess together: Gently fold the crushed meringues and the sliced strawberries into the whipped cream.

    Serve: Spoon the mixture into glass bowls or goblets. Drizzle the strawberry sauce over the top, swirling it lightly. Serve immediately so the meringue stays crisp.
