Keto Chocolate Mousse

Instructions

    Place a medium metal or glass mixing bowl in the freezer for 5 minutes before starting; a cold bowl helps the cream whip up faster and fluffier.

    Add the heavy whipping cream, unsweetened cocoa powder, powdered sweetener, vanilla extract, and a tiny pinch of salt to the chilled bowl.

    Using an electric hand mixer or a stand mixer fitted with a whisk attachment, beat the mixture on low speed for 30 seconds to incorporate the dry ingredients without creating a cocoa powder cloud.

    Increase the speed to medium-high and whip for 2-3 minutes. Stop when stiff peaks form (the mixture holds its shape when the beaters are lifted). Do not over-whip, or it will turn into chocolate butter.

    Taste and fold in a little more sweetener if desired.

    Spoon or pipe the mousse into small dessert cups. Serve immediately, or chill in the refrigerator for 1 hour for a firmer texture. Top with a few raspberries or sugar-free chocolate shavings.
