Keto Meatballs

Tender, juicy Italian-style meatballs made without breadcrumbs, perfect alongside zucchini noodles or spaghetti squash.

    Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.

    In a large bowl, combine the ground beef, ground pork, almond flour, Parmesan cheese, egg, minced garlic, parsley, Italian seasoning, salt, and pepper.

    Use your hands to gently mix the ingredients together. Do not overmix, as this can make the meatballs dense and tough.

    Form the mixture into evenly sized meatballs, about 1.5 inches in diameter (yielding roughly 15-18 meatballs).

    Place the meatballs on the prepared baking sheet, spacing them out evenly.

    Bake for 18-20 minutes, or until cooked through and nicely browned on the outside. Serve warm with low-sugar marinara sauce.
