In a medium bowl, combine the mayonnaise, sour cream, sorrel, arugula, fresh and dried tarragon, chives, green onion tops, parsley, lemon juice, and garlic.

Stir until evenly blended, then season with salt and pepper to taste.

Cover and chill for at least 4 hours to let the flavors meld; the sauce can be made up to 1 day ahead and kept refrigerated.
