Sun-Dried Tomato Pesto

A bright, savory pesto blending rehydrated sun-dried tomatoes, fresh basil, pine nuts, and garlic.

    Place the sun-dried tomatoes in a bowl, pour the boiling water over them, and let stand for 4 minutes to soften.

    Drain the tomatoes well and coarsely chop them.

    Combine the rehydrated sun-dried tomatoes, plum tomato, basil, pine nuts, olive oil, pepper, and garlic in a blender or food processor.

    Process for about 20 seconds, scraping down the sides as needed, until a thick paste forms. Use immediately or store covered in the refrigerator.
