Vegan Mac and Cheese

Comforting macaroni covered in a creamy cashew cheese sauce.

Instructions

    Cook Pasta: Boil a large pot of salted water. Add the macaroni and cook according to package instructions until al dente. Drain and set aside.

    Prepare Cashews: Drain the soaked cashews and add them to a high-speed blender.

    Blend Sauce: Add the nutritional yeast, garlic powder, onion powder, Dijon mustard, plant milk, salt, and pepper to the blender. Blend on high until completely smooth and creamy (about 2 minutes).

    Combine: Pour the creamy cashew sauce into the empty pasta pot over low heat. Add the cooked macaroni and stir continuously for 2-3 minutes until the sauce is hot and coats the pasta evenly.

    Serve: Remove from heat. Serve immediately, optionally topping with extra nutritional yeast or a sprinkle of paprika for color.
