22 baking explained — what each is, how to buy and store it, its nutrition, and safe swaps.

Vanilla extract Floral, sweet, creamy, warm, lightly woody.
Baking powder Mostly neutral; bitter or metallic if overused.
Cornstarch Neutral, nearly flavorless thickener with a silky finish when cooked properly.
Baking soda Alkaline and salty if overused, mostly neutral when balanced with acid in baking.
Powdered sugar Clean sweet flavor with a soft powdery texture.
Walnuts Rich, earthy, mildly bitter, and oily with a slight astringency — flavor deepens and sweetens when toasted.
Pecans Buttery, mildly sweet, and rich with a gentle tannin at the skin; tender yet slightly firm
Cocoa powder Natural cocoa: fruity, slightly acidic, sharp chocolate; Dutch-process: smooth, deep, mellow chocolate with less acidity and a darker hue.
Yeast When active, raw yeast has a mildly yeasty, slightly earthy, fermented aroma. In baked bread, it contributes complex, savory, slightly tangy background flavor that you may only notice by its absence.
Shortening Virtually neutral and flavorless on its own; in baked goods it contributes to an extremely tender, flaky, or light texture without adding any distinct taste.
Almond flour Rich, buttery, mildly sweet almond flavor; produces dense, moist baked goods with a tender, slightly fudgy crumb.
Cream of tartar Sharp, acidic, and astringent in isolation — not pleasant to taste directly. Its culinary role is functional (structural/chemical) rather than flavor-forward; at the quantities used, it's essentially tasteless in the finished product.
Almond extract Intensely sweet, nutty, and floral with a heady aroma that's reminiscent of marzipan and amaretto. The alcohol base is sharp raw but completely cooks off in baking.
Molasses Dark, bittersweet, and intensely caramel-rich with a mineral, almost smoky undertone. Light molasses is milder and sweeter; blackstrap is deeply bitter and robust.
Food coloring Flavorless and odorless; contributes only visual color to finished dishes.
Frosting Very sweet and buttery with a smooth, creamy mouthfeel; flavor varies by style — American is straightforward and very sweet, Swiss meringue is lighter and less sugary.
Cake mix Varies by flavor, but generally sweet, and formulated to bake up light and consistent.
Chocolate chips Sweet and rich, ranging from mild and milky to deeply bitter depending on the cocoa content.
Corn syrup Very sweet with little other flavor in the light version; the dark version adds a deeper, caramel-like note.
Gelatin Neutral and flavorless on its own, taking on whatever it's set with.
Sprinkles Crunchy and sugary, with little flavor beyond sweetness.
Whole wheat flour Nutty and slightly earthy, with a coarser texture than white flour.
