Yeast
When active, raw yeast has a mildly yeasty, slightly earthy, fermented aroma. In baked bread, it contributes complex, savory, slightly tangy background flavor that you may only notice by its absence.
Lens analyzedYeast is a living microorganism — sold as active dry or instant (rapid-rise) — that ferments sugars in dough to produce carbon dioxide gas, making bread, rolls, and pizza dough rise.
Where it comes from
The accidental discovery that wild airborne yeasts could ferment grain doughs was one of the most consequential moments in culinary history, enabling the rise of leavened bread in ancient Egypt and the Near East. Commercially produced dried yeast became widely available in the 20th century, allowing home bakers to reliably make yeasted breads without maintaining a sourdough starter. In North America, small packets of active dry yeast (7 g per packet) are the standard household quantity.
Varieties — Active dry yeast (granules that must be proofed in warm water before use), instant or rapid-rise yeast (finer granules that can be mixed directly into dry ingredients), and fresh/cake yeast (highly perishable, used by professionals).
The foundation of all leavened breads globally — from French baguettes and Italian focaccia to Middle Eastern pita and North American sandwich bread.
In a modern kitchen — Active dry and instant yeast can substitute for each other at 1:1 by weight or volume; active dry needs proofing in warm water (100–110°F / 38–43°C), while instant can go straight into the flour.
Buying it
Active dry yeast and instant yeast are both sold in 1/4 oz (7 g) packets, strips of three packets, and 4 oz jars. Check the expiration date — expired yeast may still proof but will produce weak rise. Store in the refrigerator or freezer after opening a jar.
Storing it
Store unopened packets in a cool, dry pantry. Once opened, keep it tightly sealed in the fridge or freezer to preserve its rising power — flat performance in dough means it's lost potency.
Keeps about 1 year in the pantry.
Out of yeast? Good swaps
- Sourdough starter — Replace with active sourdough starter (about 100 g per packet of yeast); longer rise time, adds distinct tanginess
- Baking powder (for quick breads only) — Not a true substitute for yeasted bread; 1 tsp baking powder per cup of flour for quick breads and flatbreads
