    Make Dough: Mix flour, semolina, salt, and yeast. Gradually add warm water and knead for 10 minutes until the dough is smooth, elastic, and slightly sticky.

    Form Balls: Coat your hands with oil. Divide the dough into small balls (about the size of a plum). Place on an oiled tray, cover, and rest for 15 minutes.

    Flatten & Fold: On a well-oiled surface, flatten a dough ball into a very thin, almost translucent circle. Brush with melted butter and sprinkle with a pinch of semolina. Fold the edges inward to form a square.

    Cook: Heat a heavy skillet or griddle over medium-high heat. Lightly flatten the square again. Place on the hot skillet.

    Flip: Cook for 2-3 minutes, turning multiple times, until both sides are golden brown, flaky, and puffed. Serve warm with honey or cheese.
