Both forms are fully ready to eat and require no further cooking.
Where it comes from
Smoking salmon began as a Northern European and Indigenous North American method of preserving the fatty fish through cold winters. It became a delicatessen icon via Jewish immigrant communities in cities like New York, and is now sold pre-sliced in nearly every grocery store.
Buying it
For cold-smoked, look for uniform deep pink-to-orange colour, a glossy surface, and no white albumin. For hot-smoked, the fish should be moist and flake cleanly without crumbling.
Storing it
Keep smoked salmon refrigerated and consume within 3–5 days of opening; unopened vacuum packs last to the printed date. Freeze for up to 2 months, though cold-smoked varieties may lose some texture upon thawing.
