Where it comes from
Mixed baby greens took inspiration from the French mesclun tradition of combining young, tender leaves harvested early, and pre-washed bagged versions became a supermarket category in North America once produce packagers scaled up salad-green processing in the late 20th century. It offered a shortcut past washing and combining several different lettuces by hand.
Buying it
Check the bag for leaves that look crisp and dry rather than wet or slimy, since excess moisture speeds up spoilage. Look at the best-by date closely, since these delicate greens wilt faster than a whole head of lettuce.
Storing it
Keep the bag sealed and refrigerated, and use it within about five days; a paper towel tucked inside can help absorb extra moisture and slow wilting.
