White Peppercorns

Earthy and faintly fermented, less bright than black pepper but still sharp.

White peppercorns come from the same pepper fruit as black pepper, but they're picked ripe and soaked to remove the dark outer skin before drying. That processing leaves a milder, more fermented heat prized in pale sauces where black flecks would otherwise show.

Where it comes from

White pepper has long been favored in classic French cream sauces and much of Chinese and Southeast Asian cooking, chosen specifically so the seasoning disappears visually into light-colored dishes. The soaking step that strips the outer skin also softens the pepper's sharper top notes.

Buying it

Buy whole white peppercorns and grind them as needed, since pre-ground white pepper loses its aroma faster than the whole corn.

Storing it

A small tin or jar with a tight lid works well; tuck it toward the back of the spice cabinet, away from the stove.
