Crawfish Boil

Boiled crawfish with corn and potatoes.

Instructions

    Fill a large outdoor boiling pot 2/3 full of water. Bring to a rolling boil over a propane burner.

    Add the dry and liquid boil seasonings, lemons, and garlic. Boil for 10 minutes to flavor the water.

    Add the potatoes and boil for 10 minutes, then add the corn and boil for another 5 minutes.

    Pour in the live, purged crawfish, pushing them down so they are completely submerged.

    Return the water to a boil, cook for 3-4 minutes, then turn off the heat immediately.

    Let the crawfish soak in the hot, spicy liquid for 20-30 minutes to absorb the flavors before draining and dumping onto a newspaper-lined table.
