    Slice the hard-boiled eggs in half lengthwise and carefully scoop out the yolks into a medium mixing bowl. Set the egg white halves aside on a serving platter.

    Mash the egg yolks thoroughly with a fork until they form a fine crumble.

    Stir in the mayonnaise, Creole mustard, Louisiana hot sauce, and Cajun seasoning until the mixture is completely smooth and creamy.

    Spoon or pipe the spicy yolk mixture back into the empty egg white halves, filling them generously.
