Blackened Salmon

Instructions

    Pat the salmon fillets completely dry with paper towels to ensure a good sear.

    Brush both sides of each fillet generously with the melted butter.

    Coat the flesh side of the fillets heavily with the blackening seasoning, pressing it in gently.

    Heat a cast-iron skillet over high heat until it is smoking hot. Add the olive oil.

    Place the salmon flesh-side down in the skillet. Cook undisturbed for 2-3 minutes until a dark, crusty char forms.

    Carefully flip the fillets and cook for another 2-4 minutes until the fish flakes easily. Serve immediately with a squeeze of fresh lemon.
