Instructions

    Melt the butter in a large skillet over medium-high heat.

    Add the diced onion, red bell pepper, and jalapeño. Sauté for 4-5 minutes until the vegetables soften and become aromatic.

    Stir in the corn kernels and Cajun seasoning, cooking for another 5 minutes until the corn is tender and slightly caramelized.

    Reduce the heat to medium-low and pour in the heavy cream.

    Simmer gently for 3-5 minutes, stirring occasionally, until the cream thickens and coats the corn mixture.

    Season with salt and black pepper to taste, and serve immediately as a warm side dish.
