Pholourie

Deep-fried spiced dough balls.

Instructions

    Mix the dry ingredients: In a large bowl, whisk together the all-purpose flour, split pea flour, baking powder, turmeric, cumin, and salt.

    Create the batter: Add the minced garlic and gradually stir in the warm water. Mix vigorously until you have a smooth, thick, sticky batter.

    Let it rest: Cover the bowl with a damp cloth and let the batter rest for 30 minutes to allow the baking powder to activate and the flavors to meld.

    Fry the pholourie: Heat 2 inches of vegetable oil in a deep pot to 350°F. Wet your fingers, scoop up a small amount of batter, and drop it into the hot oil (or use a small spoon).

    Drain and serve: Fry for 2-3 minutes until puffed up, golden brown, and floating. Drain on paper towels and serve immediately with mango or tamarind chutney.
