Classic Chicken Parmesan

    Place each chicken breast between two sheets of plastic wrap and pound to an even 1/2-inch thickness; season both sides with salt and pepper.

    Set up a breading station: flour in one dish, beaten eggs in a second, and breadcrumbs mixed with the Parmesan in a third.

    Dredge each cutlet in flour and shake off the excess, dip in egg, then press firmly into the breadcrumb mixture to coat completely.

    Heat the oil in a large skillet over medium-high until shimmering (about 350F). Fry the cutlets 3 to 4 minutes per side until deep golden and crisp, then drain on a wire rack.

    Spread a thin layer of marinara in a baking dish, arrange the cutlets, top each with a few spoonfuls of sauce and a generous handful of mozzarella.

    Bake at 425F for 12 to 15 minutes until the cheese is melted, bubbly, and lightly browned, and the chicken reaches 165F internally. Rest 5 minutes before serving over pasta.
