African Ginger Cake

    Preheat the oven to 350°F (175°C) and grease a baking sheet.

    Sift the flour, sugar, and ground ginger together into a large bowl.

    Rub in the cold cubed butter with your fingertips until the mixture resembles coarse crumbs.

    Add the water and stir until the mixture comes together into a firm dough.

    Roll out the dough on a lightly floured board to about 3/8 inch thick, then cut into rounds with a cutter or glass.
