Napolitan

A nostalgic Japanese yoshoku spaghetti stir-fried with ketchup, sausage, and peppers for a sweet-savory comfort plate.

Instructions

    Boil the spaghetti in salted water for 2 minutes past the package time so it is soft in classic Napolitan fashion, then drain and toss with 1 tsp oil to prevent sticking.

    Melt the butter with 1 tbsp oil in a large skillet over medium heat and saute the onion, sausage, and mushrooms for 4 minutes until the onion softens.

    Add the bell pepper and cook 1 minute more, then push everything to the side and fry the ketchup in the cleared space for 30 seconds to caramelize and mellow its acidity.

    Add the drained spaghetti and toss vigorously for 2 minutes until every strand is coated in glossy red sauce and lightly crisped at the edges.

    Season with a pinch of salt and pepper, plate, and finish with the grated Parmesan and a few cranks of black pepper.
