Bunless Bacon Cheeseburger

A juicy seasoned beef patty topped with melted cheddar and crisp bacon, wrapped in crunchy lettuce instead of a bun.

Instructions

    Lay the bacon in a cold skillet, set it over medium heat, and cook for 8 to 10 minutes, turning occasionally, until deeply crisp, then drain on paper towels and reserve the rendered fat.

    While the bacon cooks, gently mix the ground beef with salt and pepper and form into 4 patties about 3/4 inch thick, pressing a shallow dimple into the center of each so they cook flat.

    Raise the heat to medium-high in the same skillet and sear the patties for 3 to 4 minutes per side, until a deep brown crust forms and the internal temperature reaches 160°F.

    Top each patty with a slice of cheddar during the last minute, cover the pan briefly so the cheese melts, then build each burger between two lettuce leaves with a slice of bacon and serve hot.
