Garlic Butter Steak Bites

    Pat the steak cubes completely dry with paper towels. Season them generously with salt and black pepper on all sides.

    Heat the olive oil in a large cast-iron skillet over high heat until it starts to smoke slightly.

    Add the steak cubes in a single layer, ensuring they don't overlap (cook in batches if necessary). Sear for 2-3 minutes without moving them to develop a nice crust.

    Flip the steak cubes and cook for another 1-2 minutes until browned but still medium-rare to medium inside. Reduce the heat to medium-low.

    Add the butter, minced garlic, thyme, and rosemary to the skillet. Let the butter melt and foam, stirring it constantly so the garlic doesn't burn.
