If using a whole cauliflower, pulse the florets in a food processor until they resemble the size of rice grains. Set aside.

Heat 1 tablespoon of sesame oil in a large wok or skillet over medium-high heat. Add the diced onion and garlic, sautéing for 2 minutes until fragrant and translucent.

Add the mixed vegetables and cook for another 3 minutes until tender-crisp.

Push the vegetables to one side of the skillet. Pour the beaten eggs onto the empty side and scramble them quickly until fully cooked, then mix them into the vegetables.

Add the remaining 1 tablespoon of sesame oil and the riced cauliflower to the skillet. Pour the coconut aminos over the top.
