Carefully peel the hard-boiled eggs and slice each one in half lengthwise using a sharp knife.

Gently scoop the yellow yolks out of the egg whites and place them into a small mixing bowl. Arrange the empty egg white halves on a serving platter.

Use a fork to mash the yolks until they are completely smooth and free of large lumps.

Add the mayonnaise, Dijon mustard, and vinegar (or pickle juice) to the mashed yolks. Stir vigorously until the mixture is light, fluffy, and well incorporated.
