Remove the pork chops from the fridge 15 minutes before cooking. Pat them completely dry with a paper towel and season generously with salt and pepper on both sides.

Heat the olive oil in a large cast-iron skillet over medium-high heat until shimmering.

Carefully add the pork chops to the skillet. Sear for 4-5 minutes on the first side until a deep golden-brown crust forms. Do not move them while they sear.

Flip the pork chops. Immediately add the butter, crushed garlic, rosemary, and thyme to the skillet.

As the butter melts, tilt the pan slightly and use a spoon to continuously baste the melted garlic-herb butter over the pork chops. Cook for another 4-5 minutes until the internal temperature reaches 145°F (63°C).

Remove the pork chops from the skillet and let them rest on a plate for 5 minutes before serving. Drizzle the remaining pan juices over the top.
