Bruschetta

Grilled garlic bread topped with fresh, herbed tomatoes.

    Prepare the topping by cutting the tomatoes into small cubes and placing them in a bowl.

    Add the salt, dried oregano, and olive oil to the tomatoes, then toss gently to combine. Let sit for 5-10 minutes so the flavors meld.

    Grill or toast the bread slices over a barbecue or under a broiler until lightly charred and crisp on both sides, about 2-3 minutes per side.

    While still warm, rub one side of each slice with the cut clove of garlic to release its aroma.

    Spoon the seasoned tomatoes generously over the grilled bread and serve immediately, while the bread is still crisp. Lovely alongside grilled meat and a glass of red wine.
