Chicken Quesadilla

Crispy golden tortillas packed with seasoned chicken and gooey melted cheese, perfect for dunking in salsa and sour cream.

Instructions

    Toss the shredded chicken with the chili powder and cumin until evenly seasoned.

    Heat a skillet over medium heat and melt a little butter. Lay one tortilla in the pan and sprinkle half of it with cheese, then add the chicken and green chiles, and top with more cheese before folding the tortilla over into a half-moon.

    Cook 2 to 3 minutes until the underside is golden and crisp, then flip and cook another 2 to 3 minutes until the second side is browned and the cheese is fully melted.

    Repeat with the remaining tortillas, adding butter as needed.

    Transfer to a cutting board, let rest 1 minute so the cheese sets, then cut each quesadilla into wedges and serve with salsa and sour cream.
