On a lightly floured board, pat the dough together and roll it out into a roughly 12-inch rectangle.

Make the garlic oil: combine 3 tablespoons olive oil with the minced garlic and 1/2 teaspoon each of dried basil, oregano, and thyme. Brush about 2 tablespoons of the garlic oil over the surface of the dough.

In a frying pan over medium-high heat, combine 1 tablespoon olive oil, the vinegar, and the sliced onion. Stir often until the onion begins to brown, 8 to 10 minutes, then set aside.

Cover one lengthwise half of the dough with overlapping layers of salami, ham, fontina, Monterey Jack, and the balsamic onions. Fold the plain half of the dough over the filling and press the edges firmly to seal.

Using two wide spatulas, transfer the packet to an oiled baking sheet and tuck the ends under. Brush with the remaining garlic oil and let rise in a warm place until puffy, about 20 minutes.

Bake at 400°F (205°C) until richly browned, 15 to 20 minutes. Cut crosswise into thick slices to serve.
